The Food: Wedding Soup

This soup is basically homemade chicken soup with mini meatballs served as an appetizer at Italian weddings.  Wedding in the "old days" were not elaborate $10-50k Hollywood productions.  They were simple, fun, and quite frankly, there was not a lot of money.  If you can recall The Godfather motion picture, they had money, and you see that was in their backyard.  Back then, it was about family, friends, and a humble but joyus celebration.

Ingredients
Minature Meatballs (follow the link to the recipe but make them smaller than the diameter of a quarter)
2  14 Ounce Cans of Chicken Stock
25 Ounces of Cold Water
2  Carrots sliced in thin rounds
3  Celery Stalks, some with leaves, chopped
5  Ounces of Pasta (bowtie, rings, spaghetti broken into quarters, your choice)
Salt & Pepper to taste

This could not be any easier:  Simply add the carrots and celery to some olive oil and sautee with salt and pepper.  Add the chicken stock and water and bring to a boil.  When your meatballs are done frying, set on a paper towel to drain excess oil and add to the soup along with your pasta, reduce to a simmer for at least 30-45 minutes.
