The Food: Salmon in Vodka Sauce

Scallopine the salmon, dredge in flower, put on a clean dish, fry for a few minutes on each side in a pan of olive oil, remove from pan, put in a dish with paper towels.  In the same pan chop shallots till fine, add to the pan.  add in vodka, flame, allow to die out on its own. add in cream, capers, clam juice, simmer until pink and thick. Put salmon into the pan and continue to slowly cook for a few minutes.
