Pastries: Sfogatelli

INGREDIENTS
Dough
Ricotta
Flour
Orange Zest
Lard
Candied Raisens

This pastry, though difficult to spell, is a favorite and popular within the Italian and Sicilian Cultures.  It appears to be flakey with many layers but unlike the French croissant, it is rolled instead of layered.  A flat, square layer of dough (no salt) is rolled, pressed inside out, filled with the sweet cream, then  baked in the oven
