The Food: Drinks:  Red or White Wine Sangria

INGREDIENTS
1 Bottle of Red Wine or White Wine(either/or but not both, of any kind, can be an openend bottle too)
3 Oranges, quartered
Brandy
Apples
Ice Cubes
Seltzer

Sangria may be associated with the Spaniards, but I have seen it so many times in Italian households, its really more of a European thing.  If you can ever imagine a bottle or jug of wine about to go bad because it was not drank in time, then this is how this drink recipe originated.  To disguise the taste of wine going bad, they would mask it with fruits and juices to give it a more pleasant and sweeter taste over the bitter/vinegar one.  Naturally, there is nothing better than sangria made from homemade wine, but if you don't have any already on hand, then you will have to settle for an bottle that is new and/or already opened since homemade wine takes about year to make from begining to end.

There is no real science or exact recipe to this, its all to taste.  You can make sangria from almost anything in the refrigerator (orange juice/oranges, lemonade/lemons, lime juice/limes, etc., etc.)  Here is the way the Spaniard make it:  Red wine, oranges, apples, triple sec (orange liquer), brandy, seltzer.  The brandy and the fruit are the key here, and it is very refreshing for the summer. (Warning, do NOT drink excessive amounts in the heat as it will put a strain on your heart), you might think it has a lower alcohol content because it is mixed with seltzer and fruit juice, but the carbonation in the seltzer excellerates the intoxication of the wine, and the brandy and triple sec (if used) also increases the alcohol content).  So DO NOT immitate Clemenza in the movie The Godfather, where he is so thirsty from dancing, he puts a pitcher of it to his mouth and drinks it.

By The Glass  
1 ounce of brandy, ounce of triple sec, orange juice and/or orange liquer; 3 ounces of seltzer, pour the wine over the ice cubes, stir vigourously,

By the Pitcher
Half a bottle of wine, pour over 1/4 pitcher of ice, add cup of seltzer, squeeze in 2 oranges, quartered, add to the pitcher, add about 3 ounces of brandy, juice of half or quater of lemon, 1/4 of lime, triple sec optional.
