Insalati (Salads)

If you are ever invited to an authentic Italian's house for dinner, do not be surprised if they serve you the salad last.  No, they did not forget to bring it out earlier, its just that they believe that salad should be served last, as it is light, helps settle the stomach, and provides the "roughage" that helps digest the food, and Italians prefer the bitter taste of lettuce like raddichio and escarole.

Raddichio Treviso, often it is sandy and you should separate your leaves and wash it in cold water, or, soak and remove.
