All About Rabbit (Hare) Il
Conilio
Il Conilio (Rabbit or Hare) is popular in Sicily,
its not just a delicacy, but a meat as typical as veal, chicken or pork.
The rabbits in Sicily are a bit bigger, longer and thinner from what I can
remember. I remember hunting for them too, they smoke them out by lighting
the bushes on fire in the mountains, and when the rabbits run out of their
holes, the hunters are there ready with their guns. I think the guns
were similar to .22 rifles, but for some reason, I also think (while its
not logical) perhaps shotguns, someone please correct me if I am wrong. In
any case, I hate to use the lame addage "it tastes like chicken", but, when
its grilled as it typically is, then it does resemble what you might taste
when any lean white meat is on the grill. There are many variations
of how to cook it, again, as it is a basic meat that is common, and we hope
to list them here soon. And for the smart mouths, no, its not traditionally
served on Easter.
