Risotto con Patate (Risotto with Potatoes)

INGREDIENTS
Cooked Risotto
Onion
Extra Virgin Olive Oil
Paprika
Tomato Paste
Salt & Pepper To Taste
Red Bliss Potatoes
Green String Beans (Optional)

This can be used as a main course if you like.  Its more of a Winter dish, very filling even though its all vegetables.

Heat your olive oil in a thick skillet until the oil is hot, reduce the heat to medium or low.  Put in your onions, sliced thick, allow to cook a long time, about 20-30 minutes until they are brown but not burnt, this will caramelize them.  Wash and quarter the red bliss potatoes, shake in some paparika, stir in to coat the pan/potatoes, and fill the pan with cool (not cold, not warm) water, enough to cover the potatoes.  Add in tomato paste, cooked risotto, bring to simmer, allow to cook for 20 minutes.
