The Food: Pasta Salad
INGREDIENTS
Tri-Color Rotini (Spirals, need not be tri-color but makes a nicer presentation)
Fresh Basil
Extra Virgin Olive Oil
3oz. Container or ZBottle of Capers, Drained & Washed
Oregano
Salt & Pepper To Taste
Mozzarella, Cheddar or any other kind of cubed cheese optional.The perfect picnic or BBQ side. Here is a very simple pasta salad that can be made in minutes and is sure to be a favorite.
Boil a pot of water, add salt when it comes to a rolling boil, stir, wait for it to become a rolling boil again. Add the entire box (most likely a 12-16oz. package) and cook pasta according to the directions.
When the pasta is cooked, drain completely. Add in enough olive oil to coat and keep the pasta from sticking together. Add in the oregan, salt and pepper to taste. Add the 3oz. of capers. Mix together well, you can refrigerate until time of the event.
