Delicacies
The Italians, never wasting anything, always put
each and every part of the animal to use, in order to eat. There are
the stories of eating stuffed goat eyeballs (it is true) and of course one
of the most popular which remains popular today, is trippa, Tripe Soup, which
is cow intestines. While it sounds morbid and bizarre, remember, very
often for the poor Italian and/or Italian immigrant, it was this for dinner,
or nothing at all. Escarole soup only takes a hard laborer so far.
