The Food: Minestrone Soup
This is basically the classic Italian vegetable soup. Its easy enough to make and delicious. Many include kidney beans, string beans and peas, the beans are fine, but I am not too big on mushy green beans.
1 Quart Cold Water
3 Tablespoons virgin olive oil
3 Carrots sliced in thin rounds
3 Celery Stalks, some with leaves, chopped
1 Small red or green pepper chopped (optional)
1/4 Cup Chopped fresh Parsley
1/2 Small Onion, chopped
Salt & Pepper to taste
This is a very easy dish just add the water to a pot, add all the ingredients, bring to a boil, then reduce the heat so it simmers for an hour or two. I usually simmer mine for 1.5 hours. Some add pasta (cooked separately) and more tomato paste if it does not have enough flavor. In any case, when its ready to serve, serve it with grated romano cheese on top and croutons or garlic bread or toast to dunk.
