The Food: Mom's Meatloaf

This recipe I have also known since my early childhood and is a favorite.  It may not be Sicilian, but it is good, and is an innovation on the dishes that Sicilian Americans have brought to the table.  Unlike most recipes for  meatloaf, this one does NOT contain ketchup (I personally never understood that).  But here we go:

Ingredients
1 lb. of Chop Meat
(I like to use beef and pork, no veal)
1 Egg
Salt/Pepper to Taste
1.25 Teaspoons Grated Parmasean Cheese
2.5 Tablespoons of Bread Crumbs
1.5 Teaspoons of chopped Parsley
1 Tablespoon chopped onions

Mix all the ingredients together well.  If the mixture is too moist, add more bread crumbs.  Shape into a loaf like a brick.  Oil a pan and put in a pre-heated oven of 350F degrees.  Bake uncovered until brown and firm (approximately 40 minutes).  Serves 2.
