Lemon Shrimp
Bruschetta (Gamberi Limone)
INGREDIENTS
Extra Virgin Olive Oil
12 Medium Shrimp
Fresh Parsley
Lemon Rinds
Salt & Pepper
Fresh Garlic Clove
Limoncello or Fresh Lemon Juice
Day Old Bread or Good Italian Bread
In a pan heat your olive
oil either grate or slice off only the yellow part of the lemon. Remember,
the yellow part of the lemon tastes the same as the lemon juice, but
if you cut too deep into the white part, it will be bitter. So only
getting the rind, put it into the olive oil, add your Limoncello and allow
it to burn off. If you do not have Limoncello and do not want
it as sweet or are worried about the alcohol, use fresh lemon juice from
your lemons instead. Chop and add the shrimp until they are
cooked.
Now toast your bread slices,
rub gently with a cut garlic clove, add salt and pepper. After your
shrimp has cooked, pour it all over the toasted bread slices.
