The Food: Lamb Chops Cooked with Sage
INGREDIENTS
Extra Virgin Olive Oil
2 Whole Cloves of Garlic
Lamb Chops
Salt & Pepper to Taste
10 Leave of Fresh Sage, cleanedSage (Salvia Officinalis) is not an ingredient that you see often in the US when it comes to cooking. It is native of the Mediterranean lands but can be easily grown at home. Sage is an astringent, anti-spasmodic, antiseptic, uterine stimulant, and a carminative. It is said to relax peripheral blood vessels, and had a number of other uses. So what better to cook with?
In a sauce pan, heat your extra virgin olive oil over medium low heat. Add 2 whole cloves of garlic, sautee. Add your whole leaves of fresh sage into the pan to flavor the oil more.
Next get your lamb chops, you clean off the bone if you wish and use that excess meat for stew or soups. Add a little salt and pepper and cook for 5-7 minutes on each side (depending on the thickness, I like the small thin ones myself). When you remove it from the pain drain the chops on a paper towel for a few minutes to remove the excess oil. You can garnish the pork chops with the sage for presentation.
