The Food:  Insalata (Italian Salad)

There are many Italian salads, but the one I would see served most often at our table was a very simple one, no lettuce at all, it was especially common on hot summer days and very refreshing in place of a heavy meal.  And while we, in our family, always ate our salad last, this one was usually served first:

Ingredients:
Diced Fresh Tomatoes
Red Onion, sliced
Sliced Cucumbers
Oregano
Salt & Pepper
Extra Virgin Olive Oil
Red Wine Vinegar or Balsamic Vinegar
Optional: Mozzarella balls or strips

Simply add all the ingredients, drizzle olive oil & vinegar over the salad and sprinkle with dry oregano -- enjoy!
