The Food: Garlic (Aglio)

Garlic looks like a leek, the part we eat bulb grows in the dirt, and the stems or stalks are long and green.  Garlic has been around and used for thousands of years.  While garlic is very good for you internally, cutting cholesterol, fighting off germs and colds, sometimes the smell on your breath can linger.  Even if you brush your teeth, or have it on your hands, somehow it still makes your breath smell.  They say the way to get rid of the smell is to rub curley parsley on your hands, drink fresh squeezed orange juice, or rub some toothpaste on your hands.

Roasted Garlic
cut top of garlic off put in tin foil, good amount of salt, black pepper, tyme sprigs, extra virgin olive oil, wrap up tight.  Put it in an oven at 375F for about 1 hour.

Garlic Bread
There are several ways to make garlic bread, no matter which way you do it, please don't buy it from the supermarket or use margarine.

Rustic/Tuscan Garlic Bread
Toast your slices of bread, take some raw garlic and gently rub it over the toast, drizzle with extra virgin olive oil, sprinkle lightly with sea salt to bring out the flavor.

Roasted Garlic Bread
Find a small to medium panelle, unsliced.  Slice your bread so there is a top and a bottom, toast it.  Mix together one part sweet butter with one part of roasted garlic.  Add in salt, pepper, and herbs such as thyme or oregano to taste.  Mix together well, until the ingredients are very smooth, spread over your toast, and you will see the butter melt into the hot toast, cut into thin triangles like pizza, serve.
