The Food: Gamberi e Funghi Pasta

Shrimp with Mushrooms & Pasta

12 Large Shrimp
White Wine
Oyster Mushrooms
Red Onion
Extra Virgin Olive Oil
Salt & Pepper

This is a dish we call "tropo facile" (very easy), and very exotic.  Its not your traditional Italian or Sicilian recipe, but its Italian and its great... very tasty and easy.

Boil your water for the pastsa, thin spaghetti (not angel hair) work well, as does linguine fini.

When the water for the pasta is almost boiling, get  a pot or saucepan, coat the bottom with extra virgin olive oil.  When its hot, add a tablespoon of butter.  Add your diced red onions, sliced garlic, oregano, salt and pepper.  Allow the olive oil to get the flavor of all these ingredients (5 minutes or so), then turn up the heat, add in the white wine to deglaze. Next add your chopped shrimp, allow to cook until they start to turn red (about 5 minutes), then throw in your chopped mushrooms.    

Throw in the pasta and cook according to the intstructions (probably about 6 minutes).  When its done, put into the pan with the shrimp and mushrooms, toss, serve.
