The Food:
Foccacia
Foccacia is said to have its roots in Ancient Greece.
They cooked their bread in brick ovens and topped it off with rosemary,
pine nuts, olives and olive oil. It is almost like a pizza, flat, but
no tomato sauce or cheese (traditionally). The recipe is simple, the
concentration here is on herbs, not sauce or cheese. Just get your
dough frozen, from your local pizzeria (yes, they will sell you the dough
uncooked) and/or make it yourself. Allow it to rise, then stretch it
out into a round piece to the thickness you like (make two if want them thinner)
and top it with whatever herbs you like, experiment using thyme, oregano,
onions (my favorite), rosemary, black olives split in half and pitted, and
drizzle with olive oil.
