Sicilian Endive with Citrus Dressing

In a small dish or cup, combine fresh lemon juice, sugar, salt, mix well, add some extra virgin olive oil to thicken and blend in and "whip up" with a fork. You can leave endive leaves whole or sliced from top to bottom lengthwise. Oranges, chopped capers, celery, raisens, toss in.

Optional: Honey Mustard Dressing
Dark mustard w/mustard seeds, honey, red wine vinegar, salt, extra virgin olive oil, walnuts optional
