Poached Eggs on Toast

INGREDIENTS
Eggs
Italian Toast
Salt & Pepper To Taste

This is actually more of an English dish, but all I know is that my aunt made it for me as a child and it was always my favorite, I could eat it every day.  She did not always serve it on Italian toast, but more often on American white bread, which was better because it toasted up softer and was better for dunking in the yolk.
