The Food: All About Eggs

Eggs were once the most commonly seen food on all breakfast tables across America until the cholesterol scare. Even still, eggs are a great, nutritious food, when enjoyed in moderation, like everything else.

Chicken Egg Tips & Facts
Americans eat approximately 235 eggs per person per year
Local eggs are always fresher, and as we know, fresher is better!
Bigger is NOT always better, in fact, smaller eggs are better for baking because of the texture of the whites
The smoother the egg, the younger the chicken
The longer, more oblong eggs, the better the chance it is a double yolk which is better for making over-easy eggs
Eggs left out for more than 24 hours are just as rotten as eggs that have been in the refrigerator for more than 3 weeks
Salmonella is actually scarce in eggs, about 1 in 20,000

Duck Eggs: Compared to duc eggs, they are larger, higher in fat, more colorful and more flavorful. They must be cooked thoroughly because there is much higher risk that they are contaminated with bacteria.

Quail Egg: Compared to chicken eggs, they are smaller, but very similar in taste.  More common in French dishes, they are soft boiled and split open, often used as a salad garnish with the yolks still slightly liquid. 

Ostrich Eggs: The Ostrich is the largest living bird in the world, but is a from the Ratite family, so it cannot fly.  While it is native to Africa, it can live in many different countries throughout the world.  The ostrich grows approximately 1' taller (30cm) each month until it is 7 months old.  They can grow to over 350lbs and live to be 50 to 75 years old.  While the egg of the ostrich is the largest of any egg from any animal, relatively, it is the smallest egg in relation to the size of the animal.  

The Ostrich egg will weigh 1600 gm and is equivalent to 2 dozen chicken eggs.
An Ostrich Hen can lay 40 -100 eggs per year, averaging about 60 eggs per year.
Ostrich eggs hatch in 42 days.
Equal Rights: Females sit on the eggs until they hatch during hte day, but males sit on eggs all night.
To soft boil a fresh egg would take one hour. To hard boil would take 1 1/2 hours.
