The Food:
Italian Deli Meats
Salami:
Pepperoni:
Martodella: Italian bologna.
The fat is mixed in, not ground in, so you can see the large specs
of it. It was made by Anciant romans and flavored with mulberry, which
is where the name martodella comes from.
Prosciutto: Italian ham which
is saltier, sliced much thinner. This is best cut by hand because heat
from an electric slicer or cutter will alter the taste. It must
be cut very very paper thin.
Spec: Cured smoked
prosciutto
Testa: Head cheese, which anything
on the shoulder and above the neck ground up.
