The Food: Country Style Rigatoni

Sausage, Broccoli Rabe & Rigatoni Pasta


INGREDIENTS (Serves 1-2)

3-4 Pieces of Italian Sausage (hot or sweet)
Fresh Broccoli Rabe
Extra Virgin Olive Oil
Fresh Garlic
1/4 Red Onion
Salt & Pepper to Taste
Crushed tomatoes
Grated Cheese
(Optional)

Cook your broccoli rabe and put aside.  In a pan with a little bit of extra virgin olive oil, brown your sausage, not cooking it all the way through, and set aside.  Once it is cool you can slice it into bite size pieces.

In another pan, heat some extra virgin olive oil until lightly smoking.  Reduce the heat and add in your sliced red onion.  Add hot pepper flakes if desired, and cracked black pepper.  Deglaze with some red wine, add in your tomatoes.  Bring to a boil, reduce heat.  

Boil your water for the pasta.  

Add in your sausage to the pan of tomatoes after its been sliced.  Once your pot of water comes to a boil, add in some salt and your pasta, and yocu an then add the broccoli rabe to the pan with your sausage.

Cook your pasta according to package instructions, drain, add to the pan with the sausage and broccoli rabe, toss, serve with grated cheese.

Wine Notes: Serve with a chianti or chianti classico, preferably the same one as you deglazed with.
