The Food: Cold Seafood Salad

INGREDIENTS
Cleaned Calamari
Small Shrimp
Mussels
Celery
(Optional)
Oregano
Extra Virgin Olive Oil
Fresh Lemon
Salt & Pepper to Taste

Often, you do not see measurments or specific quantities of items here.  The reason is simple, its all by eye, according to taste, but also because we don't know how many people you are preparing this for.  Additionally, I personally do not like calamari unless it is fried (and fried right), so I would opt for less calamari and more shrimp in this dish.

Clean and devein your shrimp, clean and cut your calamari into thin rings.  Cook your shrimp and calamari for only a few mintues by boiling it in water.  Mussels can be steamed open in a large pan with top on, in a inch or two of water.  They are cooked when they open, usually within 5 minutes.  Once cooked, remove the mussels from their shells, and put into a bowl.  When the calamari and shrimp ar cooked, you can add them to the bowl, add some ice to cool them all off.  Drain the water after it all has cooled.  Slice or dice your celery and you can salt, pepper, light sprinkling of oregano to taste.   Add olive oil and even some red or white wine vinegar (just a few drops).  Toss, keep in fridge until ready to serve.  If its for a picnic, put in tupperware or container and use those chemical ice packs that don't leak.
