The Food:
Vongole alla Siciliana
(Clams Steamed Sicilian Style)
INGREDIENTS
24 Little Neck Clams
Garlic
White Wine
Cold Water
Onions
Extra Virgin Olive Oil
Oregano
Salt & PepperThis is a dish we call "tropo facile" (very easy). You can even serve it on Christmas Eve as one of the 7 seafood items you will cook (since you are cooking 7, some of them should be easy, no?), in any case you can even serve this over pasta or with bread or however you like...
In a pot, coat the bottom with extra virgin olive oil. Add your diced onions, hot pepper flakes (optional), sliced garlic, oregano, salt and pepper. Allow the olive oil to get the flavor of all these ingredients (5 minutes or so), then turn up the heat, add in the white wine, your clams, and a bit of cold water. Cook at medium high heat for about 10 minutes and/or until all the clams open (if they don't open, they ain't good, throw them out!).
