Zuppa di Pollo: Chicken
Soup
The Italians believe that chicken
soup helps get rid of the common cold. If it don't, well, hey, its
pretty delicious and the taste makes you forget about the cold for
awhile.
Ingredients
2 Quart Cold Water
3 Carrots sliced in thin rounds
3 Celery Stalks, some with leaves, chopped
1 Small red or green pepper chopped (optional)
1/4 chicken, washed
1/4 Cup Chopped fresh Parsley
1/2 Small Onion, chopped
Potatoes (Optional)
Salt & Pepper & Oregano to taste
This could not be easier: Add the water to
a pot, add all the ingredients, bring to a boil, then reduce the heat
so it simmers for an hour or two. I usually simmer mine for
1.5 hours. Some add pasta (cooked separately) or chicken stock
if it does not have enough flavor. In any case, when its ready to serve,
serve it with grated romano cheese on top and
croutons or garlic bread
or toast to dunk.
