The Food: All About Chicken

You may not see a lot of chicken dishes in Italy.  Here in the USA, it has become very popular due to health concerns over red meat, but chicken in the US is tastier than chicken found in Italy.  In Italy, chicken tends to be scrawny and the flavor is not as good.  So, what they often do, is use rabbit (hare) instead.
