The Food:
Calamari
INGREDIENTS
Calamari, sliced into rings
Flour
Frying Oil (enough to have at least 1-2" in the pan
1 Egg
Lemon and/or Marinara Sauce to Garnish
Salt & Pepper To Taste
The real key to this is to make
sure the oil is hot, and to not cook the calamari too long, so that it is
not rubbery, and not too quickly, so it is not fully cooked.
I prefer to buy cleaned calamari, so all I have
to do is take a cleaver and chop the calamari into thin rings, the tenticles
can remain as they are. Scramble one egg and dip the calamari pieces
in the egg, then dredge in the flower, which should be seasoned with the
salt and pepper. The oil is hot when you drop a little bit of flour
into the oil and if it foams, it is hot enough. Add the calmari, cook
for 2-3 minutes, remove, drain on a paper towel to remove excess oil, serve
with lemon and/or marinara sauce for
dipping.
