Caesar Salad
INGREDIENTS
Anchovies
Fresh Lemons
Eggs
Croutons
Romain Lettuce
Extra Virgin Olive Oil
Grated Cheese
Salt & Pepper To taste
Let's first get one thing straight, Caesar Salad
is not Italian at all. It was actually invented and served in Mexico,
but because of the ingredients and its name, people automatically associate
it with an Italian salad. Caesar, is a name for "king" (the Germans
call it Kaiser, the Russians Czars). In any case, here is how the Italian
version is made since you will find it on many Italian restaurant menus,
but there are many variations of this recipe.
In a food processor or blender add your anchovies,
fresh lemon juice, eggs, and extra virgin olive oil, salt and pepper to taste.
Serve over fresh romaine lettuce (be sure to tear, not cut the leaves)
into small pieces. You can add a little more grated cheese on top,
mix together well, and top with croutons.
