The Food: Braciole

Pork Scallopine

A legend of Italian cuisine, the braciole, and, its not always (or should not neccessarily be) veal. From legend to joke, "brashole" may not be the healthiest thing, but its always fought over who gets some since in my house there was only one or two per batch of Sunday Gravy and usually my father got one and the other was split by my brother, me and mom.  But, in the "early days" (when I was a kid) I never really liked it.

So, get your piece of pork scallopine (thin flat pork slice).  Tenderize until flat and 1/4" thin.
