INGREDIENTS
White Wine
1/4 White Onion
Extra Virgin Olive Oil
1 Tablespoon butter
Juice from 1/2 fresh lemon
Fresh Parsley
Salt & Pepper
Angel Hair Pasta or Spaghetti or even Linquine
Calico (Bay) scallops cook quickly and the sauce
is a quick one to make as well, so first off, bring a pot of water just about
to a boil. Add the salt for the pasta, stir.
In another pan head some olive oil. Add
the cracked pepper to taste and the choppped onions. Wait for the onions
to cook for a few minutes then add the butter then the sliced garlic.
Allow to cook for a few more minutes then add some white wine to deglaze,
but not a lot.
Right about now you should add your pasta to the
boiling water. Be sure to stir it often.
Next add the bay scallops, be sure to rinse them
in cold water first. Add your squeezed lemon (be sure to remove the
pits) and continue to cook, the scallops should cook in 5 minutes or less,
so its possible that you might want to turn off the heat while the pasta
finishes cooking. Once the pasta is done, drain well, put on a plate
then spoon the scallops over the pasta. Enjoy!
